Kale with Red Onion, Lemon and Olive Oil Dressing
This is one of my friend Linda’s favorite kale recipes. It is very simple: wash and dry, chill to crisp. Tear into bite size pieces. Slice red onion, desired amount according to your taste. Start with 1/4 of a medium sized red onion. Sprinkle with sea salt and ground pepper. Dress with lemon juice 1TB to 1/2 cup of a good olive oil. Toss. If you like it tarter, adjust your lemon juice. The Meyer lemons are sweeter, so this needs to be taken into consideration.
