Spinach salad with hard boiled eggs and ham

Spinach:  Take crisp and clean young spinach, torn into bite size pieces, add red onion chopped fine, Toss.  Add 2 sliced hard boiled eggs, a little bit of ham or turkey jerky chopped.  Excellent for a lunch salad as there’s enough protein to tide you over.  Dress with honey mustard or other favorite dressing.

Honey mustard Dressing: 1 T. honey, 1 T. Dijon mustard, add to beaten egg yolk with chopped shallot, salt and pepper, a little rice vinegar or lemon juice and 1/4 cup olive oil.
