Beet greens: wash and remove the hard center vein. Cut roughly and add to either sautéed yellow onion chopped or leeks thinly sliced. 1/2 leek, 1/4 onion. Heat preferred oil in a skillet, add your choice of onion or leek, sauté for 1-2 minutes separating and stirring. Add your greens and sauté for several minutes stirring. Add sea salt and ground pepper to taste. May also add Balsamic vinegar drizzled over, or lemon juice to taste. Can either eat alone or add to white bean soup.
Eatten raw. Alone or thrown in with lettuce and dressed with your favorite dressing.
