Dressing ideas for all those Mixed Greens!

So many GREENS to dress!

Balsamic Vinaigrette

1/2 cup extra virgin olive oil

1/2 cup white balsamic vinegar

1 clove crushed garlic

1 teaspoon ground mustard

1 pinch salt

ground black pepper to taste

In a small bowl, whisk together olive oil, white balsamic vinegar, garlic, and mustard powder. Season to taste with salt and black pepper. Stir in minced fresh herbs if desired.

Olive Oil and Lemon Salad Dressing

8 cloves garlic, minced or finely chopped (more if you LOVE garlic)
1/2 tsp of black pepper (more if desired)
2 tsp salt
1/2 cup Extra Virgin Olive Oil
1 cup Freshly squeezed lemon juice
Mix all ingredients into a container with secure lid. Shake vigorously until olive oil and lemon juice blend into one, after about 1 minute of shaking. Spread over salad greens!


¼ cup olive or flax seed oil

1 TB maple syrup

½ TB of Capers

Dash of pepper

1/8 cup of balsamic vinegar


2 tsp tahini

1 tsp soy sauce

2 tsp lemon juice

1 small clove minced

water for thinning

Mix together tahini, soy sauce, lemon juice and garlic until smooth and creamy.

Creamy Basil Dressing

4 Ounces firm tofu

30 leaves of basil

2TBSP tamari or soy sauce

2TBSP ume plum vinegar

1 cup sunflower oil

In a blender on high combine until smooth tofu, basil leaves, and 1 cup water. Stop blender add tamari or soy sauce and ume plum vinegar and continue blending. Turn blender down and add sunflower oil slowly until dressing emulsifies.
